Stuffed Zucchini Boats recipe

In the peak of the growing season, if I’ve planted zucchini, I become overloaded by the bounty. The majority of the time I prefer zucchini sautéed with butter, garlic and onions. Super simple, super quick, and super delicious. If I’m wanting to use the zucchini as the main dish, my go-to are these boats. Still simple, still quick and still delicious.

Here’s what you’ll need

  • 2 medium zucchini

  • 1 cup of filling

  • 1/2 cup of cheese (cheddar, mozzarella, pepperjack or cheese of your choice)

  • 1 tbsp olive oil

  • salt and pepper to taste

  • optional spices (garlic powder, onion, powder, paprika, Italian seasoning)

Filling (any combination you choose)

  • Ground meat with onions, garlic and spices

  • Ground meat, cheese and rice mixed together with herbs and spices

  • Ground meat, marinara sauce and cheese mixed together for a “pizza” flavor

  • any other combo you create

Instructions

  • Prepare the Zucchini:

    • Cut the zucchinis in half lengthwise.

    • Use a spoon to scoop out the center, leaving about a 1/4-inch border all around (this creates the "boat").

  • Prepare the Filling:

    • Make your filling. For example:

      • Ground Meat Filling: Cook ground beef, turkey, or sausage in a pan with olive oil onions, garlic, and spices.

      • Meat, Cheese, and Rice: Mix cooked rice with meat, cheese, herbs, and any other desired seasonings.

      • Marinara Sauce: You could stuff with meat, marinara sauce and top with cheese for a pizza style boat

  • Stuff the Zucchini:

    • fill each half with your prepared filling.

    • Top with shredded cheese (optional).

  • Bake the Zucchini Boats:

    • Put the stuffed zucchini in the oven and bake for 15-20 minutes, or until the zucchini is tender and the cheese is melted and bubbly.

  • Serve:

    • Remove boats from oven, garnish with fresh herbs or a sprinkle of cheese if desired. Serve hot and enjoy
