My favorite Greek Salad recipe

Greek salad is on repeat at the end of spring for me. When all of the tomatoes, cucumbers and onions are in abundance in my garden. It’s an easy side dish OR I add some chicken to make it a whole meal. While sometimes I add lettuce or arugula if I have it, most times I leave the greens out.

Here’s what you’ll need

  • 2-3 large tomatoes OR 2 cups of cherry tomatoes

  • 1 large or 2 small cucumbers

  • 1 small onion

  • 1/2 cup pitted kalamata olive (you can substitute black olives)

  • 7oz block of feta (preferably the block with brine not the crumbled)

  • olive oil

  • 1 lemon

  • 1 tsp oregano

  • sea salt

  • pepper

Instructions

  • Cut the tomatoes into large chunks

  • Slide the cucumber into rounds

  • Thinly slice onion

  • Add vegetables to a bowl with olives

  • Generously drizzle olive oil on top of salad

  • Squeeze lemon and sprinkle with oregano, salt and pepper

  • Mix the salad and top with feta cheese

  • Enjoy

On those hot days when I don’t want to turn the oven or stove on, I’ll add left over chicken to the top of this instead of using it for a side. I’ll make a complete meal out of this garden goodness.
