Fattoush Salad Recipe

Having travelled back and forth to Egypt this last year, I’ve picked up recipes for many local eats. This salad has all the traditional summer vegetables, but with a flavor twist that has me craving it all summer long. There are a few ingredients we may not have on hand. Purchasing them will bring out the authentic flavors of this salad, but we can omit them.
Here’s what you’ll need
2 ripe tomatoes diced
1 large cucumber diced
4–5 radishes thinly sliced
½ small red onion sliced
½ cup fresh parsley finely chopped
¼ cup fresh mint leaves finely chopped
1–2 pieces pita bread, toasted or fried (optional)
1 teaspoon sumac (plus extra for garnish)
Dressing
3 tablespoons olive oil
3 tablespoons lemon juice
1 teaspoon pomegranate molasses
1 garlic clove minced
Salt and pepper to taste
How to make:
Combine the ingredients for the dressing: olive oil, lemon juice, pomegranate molasses, garlic, salt and pepper. Let sit while combining the salad
Mix together salad ingredients: tomatoes, cucumbers, radishes, onion, parsley, mint, sumac
Once the salad is mixed add the dressing and toss together. Sprinkle with additional sumac and top with toasted pita bread
I hope this recipe inspires you to make this flavorful salad. I’ve made it without the sumac and without the pita bread. It still tastes delicious but add the sumac and you’ll get a really great addition to the flavor profile.
