Watermelon Sorbet Recipe

I hope you’re staying cool and hydrated in your summer gardens. This time of year, the humidity and heat can make it challenging to get out in our gardens. One of my favorite things to make from the garden that keeps me cool is this watermelon sorbet. It’s so easy, doesn’t require a lot of time and provides a fun way to keep hydrated.
Here’s what you’ll need:
4 cups watermelon cut into cubes
2–3 tablespoons lime juice
¼ to ½ cup sugar (adjust to taste)
I use honey (I take 1/3 cup honey and mix it with 2 tablespoons of boiling water and mix together)
Optional: fresh mint
How to make:
Cut the watermelon into cubes and remove any seeds
Freeze the cubes on a baking sheet for at least 2–4 hours
Put the frozen watermelon into a blender
Add lime juice and sugar OR honey mixture
Add the optional mint
Blend until smooth (if it’s too thick add a little water to thin)
Taste and adjust lime/sugar/honey to your liking
Eat immediately for a soft serve OR freeze for 1-2 hours for scoopable sorbet. Freezing longer will cause the sorbet to become like an ice block
Optional: sprinkle good quality sea salt on top to add electrolytes to the sorbet
